E’ un piatto leggero a base di insalata, ma perché di Parma? Perché, oltre all’aggiunta di gustosi sottoli non poteva mancare il prosciutto crudo di Parma e scaglie di parmigiano reggiano. Un connubio che non lascia indifferenti.
Cooked and served as in the past. If you come from outside and you are wondering if this is what some stranger calls “gnocco fritto”, our answer is yes… but we like to serve it always with its original taste along with its “real” name.
For large groups and by reservation only we can do it on other days.
Cibarium has not indicated any first course dishes. Why?
We are not a restaurant, we are not a “trattoria”, we are a “salsamenteria”!!!
In the nature of our restaurant the first courses are not provided. However to satisfy many requests for a first course, every day we try to have aproposal; the most frequent are the “anolini in brodo” during the winter or for special holidays (as tradition wants), the “tortelli di erbetta” or “tortelli di zucca”.
But never say never, it depends on Carla…
Carla discovers them, devises them and makes them. Our desserts are all self-produced. Carla draws on the recipes handed down to her mother by her grandmother and aunt Laura, who has been catering for 30 years and more. Every now and then Carla also offers new or revisited things. It depends on how inspired she is daily.
One thing is for sure: everything is genuine, dabòn (which in our slang means “for real”)!
We show off the pride of presenting almost only local wines. Our area is not famous for viticulture, but we have excellent wines and above all they are the best for our dishes and cold cuts.
What’s better than a fresh and sparkling wine to “degrease” the mouth after eating meats or dishes with butter and Parmigiano Reggiano? Lambrusco, Fortana, Gutturnio or Malvasia are perfect. There are also still and award-winning wines.
A special mention would be made to a “spumante” wine obtained 100% from a rare vine, the “Marsanne”. A genuine farm-to-table product. You must have a glass!
Are you ready for the tour? Here you have the opportunity to taste several seasonings of Parmigiano Reggiano, from Tosone up to over 60 months.
What is Tosone?
Tosone is the trimming of the fresh form of Parmesan cheese, made in the evening of the same day of production.
Once Tosone was given to children as a snack, and they all grew very happy… who was born in this area and is over 50 years old has a sweet memory of this type of cheese. Today technology made the trimmings disappear and Tosone almost disappeared as well. To let you taste it, we discovered dairy farms that still use wooden form tools: try it!
That was the very young… What about the very old?
A Parmigiano Reggiano of 5 years, who knows how it will be spicy! No worries, like a magic it remained so sweet and you will feel how it still melts on your palate.
It’s a light salad dish, but why “Parma”? Because, in addition to tasty pickled veggies also a generous portion of “Parma” ham and flakes of Parmigiano Reggiano have been included in the mix. A combination that does not leave the people indifferent.
It is not Bresaola from Valtellina, it is Bresaola from Parma, or better, from Val Parmossa. Faithful to the choice of local products, we want to propose this product that is absolutely made in Val Parma, which really has nothing to envy to those produced on the Alps.
Squares of hot polenta, toasted, on which is placed a slice of Guanciale that, due to the heat, melts… It is easy to see a few greedy smiles bloom!
They are commonly called “lumache” (snails) but the correct name is “chiocciole”.
Our snails are absolutely biological and farm-to-table; the bred species is the HELIX ASPERSA.
The snails have always been a dish appreciated by the people living in the “Bassa Parmense” and Cibarium, consistent with the desire to offer dishes true to the tradition, gives you the opportunity to taste them in “umido” or “trifolate”, as they were cooked in the peasant houses of our countryside.

We prefer not to dwell on this outrageous gastronomic digression. Let’s put it simply like this: It is the shoulder of the pork, roasted, and lightly smoked: yes, you got it right… smoked.

It is the famous Spalla di San Secondo. The cooked shoulder-cut of San Secondo is typical of the lower Parma area.
Some say it was born as a plan-b for the meat that was degrading due to an imperfect seasoning caused by the presence of the shoulder bone.

Another delight we borrowed from neighbors. Also this cold-cut is typical of the tradition from the city of Piacenza, a truly handcraft product even today, which includes the belly and a lateral part of particularly heavy pigs, coming only from selected farms of Emilia Romagna and Lombardia. Very large, very fragrant, with rosy fat: that bacon we call Pancetta Lardata suggests that sin of throat, that even the most severe provost would have forgiven…
Small, fresh and soft, sweet and delicate: the salami for those who know.
The salame-strolghino comes from the trimmings of meat from the thigh of the pork, for the preparation of Culatello; the meat is then grinded, salted and sinked in our local wine. After 15/20 days it is ready to eat.
The “strogino” owes its name to the verb “tovare” (to find) that in our local dialect sounds like “strolgheer”.
The molds that covered the outside of this salami gave important indications to the Norcino about the evolution of the seasoning process of the finest Culatello, which slept right with it.
Il salame is salami: ours is produced by a small artisan laboratory located on the banks of the Po river, the guy there is a young butcher guarding an ancient recipe inherited from his grandfather who, for more than fifty years, has sought with the utmost secrecy the sacred grail of salami.
Here we drove a few kilometers … The Coppa Piacentina is typical of the Province of Piacenza: it matures six months, it is a big cylinder that simply smells soooooo good, weighing more than 2.5 kg.
In our slang we say “l’è bela dolsa”, in fact its peculiar characteristic is the “sweetness”, therefore little salt and a very calibrated use of local spices, which should not overpower the “scent” of the seasoned meat.
It is obtained from the union of the supraspinatus and infraspinatus muscle of the front limb of the pig: more easily said… it is very good. A true excellence for true connoisseurs: the locals consider it top gourmet and it is produced exclusively with a specific protocol by the ancient producers of Culatello and Spalla Cruda. The brand Spalla Cruda of Palasone di Sissa is officially certified.
It looks like Fiocco di Culatello, but it is delicate salting and its taste will make you encore.
It is the taste of the “new”. Nebbione is a product born just a few years ago, reflecting how much in our area there is still a great desire to create and so much for you to discover. From the name you can imagine where it is matured: the fog, “nebbia” in Italian, means you have to search for it near the Po river.
Nebbione is obtained from the same anatomical part of the pig from which both Culatello and Culatta are obtained. The idea of the manufacturer was to merge the best of these two specialties together. The Nebbione is a Culatta that has been salted, spiced and stuffed like Culatello, then it matures in the humid cellars together with the king of salami.
Soft like Culatta, perfumed as Culatello: that’s why you have to try it!
Take a special Culatello, leave the rind and add a little salt, then send it to sleep with the best hams of the area… Okay, let me introduce you to the “Gran Culì”. Cibarium has selected this original product of excellence, a giant breech, about 7 to 8 kilos in weight, and a minimum seasoning of 18 to 20 months.
The “Parma”, we call it like that. It’s raw ham and you’ve probably eaten so many others: that’s why we’re happy to let you taste the “Parma”, we know it will have no comparison.
It is a real excellence of our territory: the world knows us thanks to him and to some delicious Parmigiano-Reggiano cheese flakes.
Pork and salt: that’s it …yes inside the “Parma” you do not find ingredients that you don’t know the names. The winds coming from Mar Tirreno and Golfo Ligure, blow right inside the Val Parma (Parma valley), where the magic takes place: long seasoning, massages, the care of the master producers and finally the selection that Cibarium offers to its “customers friends” (only hams matured for over 26 months).

The King: Protected Designation of Origin (PDO in English but DOP in Italian) and produced in a very small area of our territory (Busseto, Polesine Parmense, Zibello, Soragna, Roccabianca San Secondo, Sissa and Colorno), right next to the big slow Po river.
If you come to visit during the winter, the fog can give you a hard time: now enjoy the Culatello and say thanks to the fog. The micro-climate of the lower Parma area, the influence of the big river and THAT FOG allow the perfect ripeness and the aromas that you will never forget.
Inside the DOP area there are also the “ANCIENT MANUFACTURERS”, the founding members of the consortium: their products can be recognized by the white and red checked coat of arms, here at Cibarium you can find it.

La facciamo come una volta. Se vieni da fuori e ti chiedi se questa è quella che chiamano “gnocco fritto”, ti rispondiamo di sì… ma ci piace tanto servirla sempre col suo gusto e col suo nome.
Per gruppi numerosi e su prenotazione possiamo farla anche in altri giorni.
Cibarium non ha indicato nessun primo piatto a menù. Perché ?
Non siamo un ristorante, non siamo una trattoria, siamo una salsamenteria!!!
Nella natura del nostro locale i primi piatti non sono previsti. Per soddisfare, però, le tante richieste di un primo piatto ogni giorno c’è qualche proposta; le più frequenti sono gli anolini in brodo nel periodo invernale o nelle festività (come da tradizione), i tortelli d’erbetta o di zucca.
Ma mai dire mai, dipende da Carla e da cosa vuol fare quel giorno…
Carla li scopre, li pensa e li fa’. I nostri dessert sono tutti autoprodotti. Carla attinge alle ricette tramandate alla mamma dalla nonna e da zia Laura, che la ristorazione la fece per 30 anni e più. Ogni tanto propone anche cose nuove o rivisitate. Dipende da com’è ispirata quel giorno. Una cosa è certa: tutto è genuino, dabòn (che in dialetto significa davvero)!
Abbiamo l’orgoglio di presentare quasi solo vini del territorio. La nostra zona che non è famosa per la viticoltura, ma abbiamo ottimi vini e soprattutto sono i migliori per i nostri piatti e salumi. Cosa c’è di meglio di un vino, fresco e frizzante per “sgrassare” la bocca dopo aver mangiato salumi o piatti con burro e Parmigiano Reggiano? Lambrusco, Fortana, Gutturnio o Malvasia sono perfetti. Ci sono anche vini fermi e pluripremiati.
Una menzione particolare farei ad un vino spumante a Km 0 ottenuto al 100% da un vitigno raro, il “Marsanne”. Lo devi assaggiare!

Cos’è il tosone ?
Il tosone è la rifilatura della forma fresca di parmigiano, effettuata alla sera del giorno di produzione. Un tempo veniva dato ai bambini come merenda, e crescevano molto felici… chi è nato in questa zona ed è over 50 ha un dolcissimo ricordo di questo formaggio. Oggi, con la tecnologia, spariscono le rifilature e sparisce anche il Tosone. Per fartelo gustare, cerchiamo caseifici che utilizzino ancora gli stringi-forma in legno: provalo!
Che dire sullo stravecchio?
Un Parmigiano Reggiano di 5 anni, chissà come sarà piccante ! Non è vero, è rimasto dolce e sentirai come ancora si scioglie sul palato.
Quadretti di polenta calda, abbrustolita, sui quali viene adagiata una fettina di guanciale che, per effetto del calore, si scioglie… Ci vuole poco a volte per veder sbocciare qualche ghiotto sorriso!
Sono comunemente chiamate lumache ma il nome corretto è chiocciole. Le nostre chiocciole provengono da un allevamento assolutamente biologico e a km 0; la specie allevata è la HELIX ASPERSA.
Le lumache sono sempre state un piatto apprezzato dal popolo della bassa e Cibarium, coerente con la propria volontà di proporre piatti della vera tradizione, ti offre la possibilità di assaporale in “umido” o “trifolate”, come nelle case contadine del luogo.

Non è bresaola della Valtellina, è bresaola di Parma, o meglio, della Val Parmossa. Fedeli alla scelta dei prodotti del territorio, ti vogliamo proporre questo salume assolutamente made in Val Parma, che non ha davvero nulla da invidiare a quelli prodotti sull’arco alpino.
Preferiamo non dilungarci troppo su questa sfiziosa digressione gastronomica. E’ la spalla del maiale che viene arrostita e leggermente affumicata: si, hai capito bene… affumicata.
E’ la famosa Spalla di San Secondo. La spalla cotta di San Secondo è un salume tipico della bassa Parmense. Pare sia nata come recupero di un salume che stava degradando a causa di una non perfetta stagionatura dovuta all’osso della spalla. Cibarium la propone nel modo migliore in cui può essere degustata: Calda e tagliata a mano…

Un´altra delizia che abbiamo preso a prestito dai vicini di casa. Anche questo salume è tipico della tradizione piacentina, un vero prodotto artigianale ancor oggi, che comprende la pancia e parte del fianco di suini particolarmente pesanti, provenienti solo da allevamenti selezionati dell’Emilia Romagna e Lombardia. Grandissima, molto profumata, dal grasso roseo: la pancetta lardata suggerisce quel peccato di gola che anche il più severo prevosto avrebbe perdonato…
Piccolo, fresco e morbido , dolce e delicato: il salame di chi se ne intende. Il salame strolghino nasce dalle rifilature di carne della lavorazione della coscia, per la preparazione del culatello; la carne viene poi macinata, salata ed ubriacata nel vino nostrano. Dopo 15/20 giorni è pronto da mangiare.
Lo “stroghino” deve il suo nome al verbo “trovare” che in dialetto, da queste parti, si dice “strolgheer”. Le muffe che ricoprivano questo salume davano indicazioni al Norcino sull’evoluzione che stava avendo il processo di stagionatura dei pezzi più pregiati quali il Culatello.
Il salame è salame: il nostro è prodotto da un piccolo laboratorio artigianale situato sulle rive del Po, lo produce un giovane norcino custodendo una antica ricetta ereditata dal nonno, che per più di cinquant’anni ha ricercato con la massima segretezza il sacro graal del salame.
Qui abbiamo fatto qualche chilometro… La coppa piacentina è tipica della Provincia di Piacenza: stagiona sei mesi, è un cilindro profumato di “buono” e pesa più di 2,5 kg.
In dialetto si dice “l’è bela dolsa”, infatti la sua caratteristica peculiare è la “dolcezza”, quindi poco sale e un uso molto calibrato delle spezie, che non devono sovrastare il “profumo” del salume stagionato.
E’ ricavata dall’unione del muscolo sovraspinato e sottospinato dell’arto anteriore del suino: è buonissima e basta. Una vera eccellenza per intenditori: i locali la considerano gourmet ed è prodotta esclusivamente con uno specifico statuto dagli Antichi produttori del Culatello e della Spalla Cruda. Il marchio Spalla Cruda di Palasone di Sissa è certificato.
Assomiglia a vedersi al Fiocco di Culatello, ma è di salatura delicata ed il suo gusto ti farà fare il bis.
E’ il gusto del “nuovo”. Un salume nato da pochi anni, a testimonianza di quanto nella nostra zona ci sia ancora tanta voglia di creare e tanto da scoprire. Dal nome si può immaginare dove viene stagionato: la nebbia, la bassa vicino al Po. Si ottiene dalla stessa parte anatomica del maiale dalla quale si ricava sia il Culatello che la Culatta. L’idea del produttore è di fondere assieme il meglio di queste due specialità. Il Nebbione è una Culatta che viene salata, speziata e insaccata come il Culatello, poi matura nelle cantine umide assieme al Re dei salumi. Morbido come Culatta, profumato come Culatello: ecco perché devi provarlo!
Prendi un Culatello speciale, lascia la cotenna ed aggiungi un po’ di sale, poi mandalo a dormire in mezzo ai prosciutti migliori della zona… ti presento il “Gran Culì”. Cibarium ha selezionato questo originale prodotto d’eccellenza, una culatta gigante di circa 7-8 kg, e stagionatura minima di 18-20 mesi.
“Parma”, lo chiamiamo così. E’ prosciutto crudo e probabilmente ne hai mangiati tanti altri: per questo siamo felici di farti gustare il “Parma”, sapendo che non avrà paragoni. E’ l’eccellenza alimentare del nostro territorio: il mondo ci conosce grazie a lui e a qualche deliziosa scaglia di formaggio Parmigiano-Reggiano.
Suino e sale: nient’altro… già nel “Parma” non trovi ingredienti con nomi che non conosci. I venti che arrivano dal Tirreno e dal Golfo Ligure, si incanalano Val Parma e la magia avviene proprio lì: una lunga stagionatura, i massaggi, le cure dei maestri produttori e la selezione di Cibarium che propone ai suoi “amici clienti” solo prosciutti di oltre 26 mesi.

Il Re. Denominazione di Origine Protetta (DOP) e prodotto in una piccolissima area del nostro territorio (son solo 8 comuni: Busseto, Polesine Parmense, Zibello, Soragna, Roccabianca San Secondo, Sissa e Colorno), proprio a ridosso del fiume Po. Se vieni a trovarci d’inverno, la nebbia potrebbe averti fatto arrabbiare: adesso gusta il culatello DOP e ringraziala. Il micro-clima della bassa parmense, l’influsso del Grande Fiume, e perché no proprio un po’ di sana nebbia permettono la perfetta maturazione ed i profumi che non dimenticherai.
All’interno dell’area DOP poi ci sono gli “ANTICHI PRODUTTORI”, i soci fondatori del consorzio: i loro prodotti si possono riconoscere dallo stemma a quadri bianco e rosso, da noi questo stemma lo trovi.

La verdura di stagione, cotta nell´acqua e nell´aceto con il sale, lo zucchero e qualche spezia. Le spezie, i tempi e gli
accorgimenti sono stati collaudati da una cara zia, nel periodo che corre fra il dopoguerra e i primi personal
computer. La nostra giardiniera rimane croccante, l´aceto c´è ma non alza la voce, così il palato si gode anche le note
di fondo. Ci divertiamo a copiare la ricetta di zia Laura ogni settimana, così la giardiniera è sempre fresca come il suo
ricordo.
